Daytime offers a gorgeous light filled interior with a huge wall of windows over looking the main street of Robertson. Plus an elevated sun soaked terrace with an incredible garden.
As evening falls we transform into a sophisticated and beautifully lit jewel box of a dining room and cocktail bar.
Our service style is slick and unpretentious. We aim to make everybody feel comfortable and welcome.
My name is Adam Towers, and I am excited to contribute this special venue to the township of Robertson.
I’ve spent the last 35 years managing amazing venues in Sydney and New York. And even a delightful stint in Moss Vale!
Amongst my favourites were Bistro Moncur, Onde, Bambini Trust, Red Lantern Darlinghurst, Gemma at the Bowery Hotel, Super Linda Tribeca, Mercer Kitchen Soho.
I also have a strong background in bespoke private events and have thrown many elaborate parties for clients with high expectations.
Gibson can be booked out for your next event, be it a sit down dinner or a stand up canapé cocktail party.
We have a stunning interior with a lush and leafy terrace and can accommodate up to 65 people.
I have a black book of great entertainers available to make your party unforgettable.
Our decor has been created by international designer Natasha Perkins, complimented by artworks and curios I’ve collected over the years.
Our bespoke terrace garden was curated by Billy and Jason at the Shrubbery of Exeter.

Where We Are Located
Nestled in the heart of Robertson in the Southern Highlands, Gibson of Robertson sits right amongst the town’s charming cafés, country scenery, and iconic landmarks - just moments from the famous “Big Potato” (or Pig Potato, if you know, you know). It’s the perfect destination venue for relaxed country celebrations with plenty of character.
