WELCOME TO GIBSON OF ROBERTSON

I’m Adam and I’m thrilled to have landed in the lush landscape of Robertson.

I’ve spent the last 35 years managing amazing venues in Sydney and New York. And even a delightful stint in Moss Vale!

Amongst my favourites were Bistro Moncur, Onde, Bambini Trust, Red Lantern Darlinghurst, Gemma at the Bowery Hotel, Super Linda Tribeca, Mercer Kitchen Soho.

I also have a strong background in bespoke private events and have thrown many elaborate parties for clients with high expectations.

Gibson is stunning in the daylight as a cafe and really dazzles as a cocktail bar at night.

Our lush interior has been tastefully appointed by local designer Natasha Perkins and our stunning leafy terrace created by Billy and Jason at The Shrubbery of Exeter.

My goal is that Gibson will be a welcome contribution to Highlands and become an integral part of socialising in the Robertson community.

Friday - Sunday 7.30am - 3pm

Serving Campos Coffee, Bircher Muesli/Poached Fruit, Scones, Muffins,Toasted Ciabatta Sandwiches, Burrata/Prosciutto/Pomegranate Salad, Sticky Date Pudding and more.

COCKTAIL BAR
Thursday, Friday, Saturday and Sunday Nights from 5pm - 9pm (or later if you’re having a good time!)

We have great Cocktails, Mocktails, Wines by the Glass, Local Draft Beer.

Try a Prawn Cocktail, a Pork filled Bao Bun, Union Square Spiced Nuts or Benn’s Chicken Liver Parfait with Pedro Ximinez Jelly.
